Egg pudding (Pudim de ovos) is a traditional dessert in Portugal. It’s a popular homemade dessert made with rather… nutritious ingredients!
It’s very easy to make and quick to prepare, but it must be enjoyed cold. It’s therefore best prepared the day before serving.
Ingredients (serves 6)
- 400 g sugar
- 10 eggs
- 1/2 litre whole milk
- Liquid caramel (to taste)
- 200 ml Port wine (optional)
Method
- Crack the eggs and mix them with the sugar in a large bowl.
- Add the milk and Port wine, then whisk together until all lumps disappear.
- Turn over the mould and coat the base with caramel.
- Pour the egg–sugar–milk mixture into the mould and close it with the lid.
- Place the mould in the oven on a baking tray set mid-height and filled with water to cook in a bain-marie.
- Bake for 45 minutes at 200°C.
- After baking, let the pudding cool, then refrigerate for at least 3 hours.
The advantage of this dessert is that it only requires ingredients usually found in every kitchen: sugar, eggs and milk. All you need is the right mould to cook the pudding in a bain-marie.

if I use the “optional” 200 ml Port wine of this recipe, do I reduce the milk accordingly?
